Macaroni Salad

The best macaroni salad.

  • Servings: 6 cups
  • Prep Time: 20 minutes + chill time
  • Cook Time: 10 minutes
  • 8 oz (227g) macaroni noodles
  • 1/2 cup (80g) finely diced sweet gherkins
  • 3/4 cup (100g) finely diced red bell pepper
  • 1/3 cup (55g) finely diced celery
  • 1/3 cup (45g) finely diced red onion
  • 3/4 cup (175g) mayo
  • 1/4 cup (70g) sour cream
  • 2 tbsp sweet pickle juice
  • 1 tbsp red wine vinegar
  • 1 tbsp sugar
  • 2 tsp dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp garlic powder
  • 1/8 tsp crushed red pepper
  1. Cook the noodles, drain and rinse in cold water.
  2. In a large bowl combine noodles, pickles, red pepper, celery, red onion.
  3. In another bowl whisk together dressing ingredients.
  4. Mix dressing into salad, let chill for at least an hour.
